French Chocolate ?clairs | Food & Drink Blog

?clair means the flash of lightning in French. This sweet dish originated in France in 19th century and was called as the ?pain la duchesse ?or as petite duchesse. Many food historians opine that it was first created by a popular pastry chef of French Royalty Marie Antoine Careme. This is an ideal treat for all ages.

Ingredients:
Butter ? ? cup
Water ? 1 cup
All purpose flour ? 1 cup
Salt ? 1 cup
Salt ? ? tsp
Eggs ? 4
Vanilla pudding mix ? 1 pack
Cold milk ? 2 ? cups
Heavy cream ? 1 cup
Confectioner?s sugar ? 1 tsp
Vanilla extract ? 1 tsp
Semisweet chocolate ? 2 squares
Butter ? 2 tbsp
Confectioners? sugar ? 1 cup
Vanilla extract ? 1 tsp
Hot water ? 3 tbsp

French Chocolate ?clairs
Method:

  1. Preheat oven to 350 degrees F and take a cookie sheet and grease it.
  2. In a sauce pan, mix well the ? cup butter and water and boil well. Now reduce the flame and add the flour and salt.
  3. Stir well until the mixture leaves the sides and becomes stiff dough. Remove from heat.
  4. Add eggs one by one after beating each well and spoon the dough in a piping bag and pipe it in to 1 ? X 4 inch strips.
  5. Bake this in preheated oven for 15 minutes and then reduce the heat to 325 ?F and bake 20 minutes more. Cool well on a wire rack.
  6. Mix the pudding mix and milk according to instructions on the pack. Now mix the cream after beating it until it forms like a peak along with ? cup and add vanilla.?
  7. Make cuts in the baked pastry and fill it with the pudding mix.
  8. Melt the chocolate and 2 tbsp butter in a sauce pan and add I tsp vanilla and confectioner?s sugar and stir well. Cool it and apply over the filled ?clairs. Chill and serve.
